In cooking
Cooking peas are slightly larger than snack peas. The slightly larger peas are typically not quite as sweet, and therefore require a short blanching before use.
Cooking peas contain a little more starch, so they work as a perfect solution in, for example, a bolognese, to save a little on the animal protein.
The smaller peas - the snack peas - can easily be used in cooking too. For example, they are lovely in salads and as a topping. The favorite here in the office is in a fruit salad.
